Quick, Easy, Healthy Holiday COOKIES πŸͺ πŸŽ„ πŸ•Ž

If you're attending a Chrismakwansakah party this weekend and not sure what to bring, or if you're visiting family next week and want to impress everyone, I have THE recipe for you!

These cookies are major crowd pleasers. They taste like buttery thumbprint cookies (just like those sugar cookies with fruit filling from your childhood), but have no refined sugar, gluten, or dairy.

Since they taste like they're bad for you, nobody will know the difference. Your secret is safe with me!

Just like all of my recipes, this one requires little preparation and cooking. Let's get baking!

Start by putting the almond flour, sea salt, and baking soda in a medium bowl and mixing with a fork.

Next, melt the coconut oil over low heat. Let it cool down slightly for a few minutes, then add to a separate, large bowl with the vanilla and maple syrup.

The jam snuck in the photo with the wet ingredients, but don't use it now!

Mix the melted coconut oil, vanilla, and maple syrup with a whisk or electric mixer.

Slowly pour the dry ingredients into the wet ingredients and continue to mix until a dough forms. Then pick the dough up with your hands and form a ball.

Cover the bowl and refrigerate for at least an hour. I waited exactly one hour, since I was feeling impatient and excited for cookies. 

We're close to baking time! Preheat your oven to 350 degrees.

Using a tablespoon, portion out about sixteen balls onto a baking sheet lined with parchment paper. If your dough makes a few more or a few less balls, no big deal!

Flatten the balls with the palm of your hand.

Final step! Using your pinky or the back of a spoon, make a well in the middle of each cookie. Fill the indentation with a small amount of jam. I used strawberry with no added sugar. Any type of fruit preserves will work well here. Pick your favorite.

Put the cookie sheet in the oven and bake for 12-15 minutes.

I let them rest on a cooling rack until slightly warm, but they could easily cool on a plate. 

Try to not eat ALL of them <3

6. Remove the dough from the refrigerator and preheat the oven to 350 degrees.

7. Using a tablespoon, portion out about sixteen balls onto a baking sheet lined with parchment paper.

8. Flatten the balls with the palm of your hand and then using your pinky or the back of a spoon, make a small well in the middle of each cookie.

9. Fill the wells with a small amount of jam.

10. Bake for 12-15, then let cool.
