I hope you’re getting ready to enjoy some major r&r over the long weekend!
With that in mind, I’m keeping today’s blog short and flavorful, just like my super slawsome recipe below.
If you’re attending or hosting a BBQ this weekend, make this dish because THERE IS NO COOKING INVOLVED.
That’s right, NO COOKING, just some simple chopping and tossing and you're good to go. Welcome to your new fave side dish.
It’s perfect if you’re feeling lazy, don’t want to turn on the oven, or are one of those people who strictly uses the kitchen to store condiments.
We all know this weekend’s BBQ’s are going to have an overflow of chips, dips, treats, booze, and all sorts of other not-so-healthy options. My super slaw is packed with healthy stuff and is a total crowd pleaser.
I bought all the ingredients from Trader Joe’s (minus the spices I had at home) to show you that healthy plus delicious does not equal expensive.
Let’s get chopping!
First, open the two bags of TJ’s Cruciferous Crunch and pour into a large bowl. Yep, I told you this was easy.
Next, wash and chop the cherry or grape tomatoes. I bought a large container and used about half the box. If you get a regular sized pint container, use the whole thing.
I chopped my tomatoes in quarters, but do you. Feeling lazy? Just halve the tomatoes. Too much effort? Leave them whole.
Move onto the basil, which needs to be thoroughly washed and patted dry. Dirt loves to hang onto basil, which doesn’t make for a delicious slaw.
Chop the basil into thin strips and set aside with the tomatoes. Feeling lazy again? No prob. Rip the basil into pieces with your fingers. So simps.
Add the tomatoes, basil, and half bag of shredded carrots to the bowl of Cruciferous Crunch.
Now it’s time to make the dressing. In a separate bowl, squeeze the juice of two lemons. One of my all time favorite kitchen gadgets is this citrus juicer. I love not having seeds in my food and use it daily.
Add the olive oil and spices to the lemon juice and whisk with a fork. Pour the dressing over the large bowl of veggies and massage with your hands. Really get in there. I spent about two minutes mixing and massaging, which distributed the dressing and made it extra awesome.
Final step: chop the avocados and layer them on top. You can be fake fancy like me and drizzle a little extra olive oil and another pinch of cayenne. Or feel free to just gently mix the avocados into the slaw.
That’s all folks! ENJOY! Full recipe below.
As always, please reach out with any questions.
