A while back, we jammed out about afternoon noshin' and the easiest, healthiest packaged snacks to keep at work or stock at home. Today we’re stepping it up a notch with an energy bite recipe that you can make yourself...and they taste like dessert!
These bites are comprised of only six ingredients and there's NO COOKING REQUIRED. You know how we do on the blog!
They’re a perfect post-workout snack, especially if you’re getting tired of the usual banana, energy bar, or smoothie routine.
They keep in the fridge for about a week and can easily be thrown in a container for the gym or office. But they’re so good, they may not make it out of the house!
Let’s get “cooking”, good looking. (Full recipe below)
Start by mixing the almond butter, rolled oats, cacao powder, maple syrup, and sea salt in a large bowl with a fork or spoon. After a couple minutes of stirring, grab the mixture with your hands and form into a ball.
If your mixture is too dry, add a bit more almond butter or splash maple syrup.
Yep I know what you’re thinking here. STAY WITH ME PEOPLE. Get past this step and the payout will be great. I promise.
Next, take a tablespoon and scoop out into same-sized portions. My mixture made ten energy bites. You could certainly make them smaller and have more!
Line a plate, cutting board, or baking sheet with parchment paper or tin foil. I used parchment paper since it’s best at preventing sticking. Set to the side.
Roll each portion of the mixture with your hands, then dip into a bowl of coconut flakes until thoroughly coated. I found this part to be really fun and satisfying...but not as fun as eating them.
Last step before eating: put the energy bites on the parchment lined tray and set in the fridge for at least thirty minutes.
That’s it - quick, simple, healthy, and decadent!

¾ cup creamy almond butter or peanut butter, no sugar added, just nuts and salt (I used almond)
¾ rolled oats

¼ cup maple syrup
a few pinches of sea salt
1 cup unsweetened shredded coconut flakes
1) Mix all ingredients together in a large bowl with a fork or spoon.
2) After a few minutes of stirring, pick up mixture with hands and form into a large ball. If mixture is dry, add a bit more nut butter and splash of maple syrup.
3) Line a plate, cutting board, or baking sheet with parchment paper or tin foil. Set to the side.
4) Roll each portion of the mixture with your hands, then dip into a bowl of coconut flakes until thoroughly coated.
5) Place energy bites on lined tray and set in the refrigerator for at least thirty minutes.
